The “You” in Menu

One of the top restaurant marketing trends of 2015 is locally sourced, organic foods.

If it’s local, people are fascinated. Why? Because a lot of them have no idea food can be grown nearby. That all connects to the concept of going “out” for dinner, which the baby boomers learned to think of as an exotic treat when they were growing up in the hardscrabble 1940’s and ’50’s.

“Out” was always a better place to get a meal than at boring old “in”, where mom was likely to serve up the same gray meatloaf or chicken hotdish again tonight.

“Out” might bring you an exotic choice like chicken wings, or at least the chance to have a milk shake with your meal.  The chances of that went way up if dad ordered a beer.

The message to impressionable youngsters of that era – the farther “out” you went, the better the meal.

But yesterday as we were going over the latest science stories at The Meeting That Never Ends we saw this bit of research about how mosquitoes choose who they’ll bite.  The clear indication is that the little pointy-nosed critters are lured by something genetic that is shared among families!

The assumption here is that it’s a fundamental element of body odor.   Identical twins were found to be equally attractive to the tiny bloodsuckers of summer.

A couple of great marketing ideas quickly came out of this.

My favorite – identify particularly scrumptious bloodlines and present them as “decoy guests” for hire at high-buck summertime parties. If we know mosquitoes love those Johnsons, or just can’t get enough of the Herrera sisters, hire them to draw the swarms away from the more important invitees.

The downside?

Having to segregate the bait people from the rest, and possible lawsuits over West Nile Virus.

But then we realized something else – if we completely disregard the scientific method and turn this research on its head, it could be an early indication that the reverse is true and people also have genetic predispositions to like certain foods!

For restaurateurs, that means there is this tantalizing future scenario – when guests arrive they check in at the hostess stand and are given a quick DNA test to determine their pre-ordained dining tendencies.

That person then receives a menu tailored to their genetic food preference profile! Imagine – a restaurant that could hand you a menu where you’ll like absolutely EVERYTHING!

Would you go there?

Of course you would, as long as your family doesn’t also have an inherent fussiness over things like genetic privacy.

Our bet is that most people will be perfectly fine with it, and the establishment could also work some side agreements with marketing firms to get a secondary income on the data!

Yes, we realize that people get particularly overwrought about misuse of personal information. But for the most part, when our data is harvested we don’t even know about it, so the pain is nearly invisible.

The only obvious downside we see for consumers in this would be a tendency for restaurants with outdoor seating to put especially tasty people in a separate area, to draw away the attention of any needle-nosed intruders!

When I started Genway more than 20 years ago, my goal was to use genetic engineering to open the door to new food worlds where we all could live happier, or at least more interesting, lives.

In the process, I’ve fought for my vision against the stubborn rule-following of investors, Congressional committees, scientific oversight panels, torch mobs, mothers, tree huggers and Luddite scolds.

That’s how the world gained Screaming Pumpkins, Cobrananas, Living Toast and Lightning Bug Tomatoes! My creations are all special. They bring something to the food that was not there before – something taboo, something that feels a little bit crazy! That’s the true benefit of my primary scientific strategy – something I call the “Why Not Method.” It has led us to a bold new frontier where our food has the potential not only to grow, but to develop its own talents, add to its skills and abilities, and indulge its ambitions.

It’s a very American approach.

That’s why I’m so discouraged to see news like this – the United States has OK’d a Canadian grown, genetically modified apple that does not turn brown when you cut it open.

That’s it?
That’s it!

All that science, just to get a timid food that does NOT do something! I’m crushed!

It reminds me of a challenge I was once given by a church pastor from the Florida Everglades who wrote to say his congregation was praying for me because I am “messing with creation” to suit my own whims. He reasoned that I am selfish because nothing made by God can be improved.

That’s when I brought up Adam. As a fundamentally flawed apple-biter, Adam’s tendencies introduce a huge problem into the God-built system that has never been fixed.

He admitted that if I could use genetic engineering to “hack” the Garden of Eden story and alter the outcome, that would be a change that God would have to rubber stamp. He took it back to his congregation and suddenly they were full of bright ideas!

“Make apples ugly”, said one.
“Take away the crunch,” offered another.
“Shrink them to the size of raisins,” said a third.

Interestingly, nobody wanted to change Adam. All their attention was focused on the apple. OK, I guess, but these these ideas seemed rather passive to me because they only take things away. Where’s the action? The sizzle? The thrill of something new?

Instead, I went into the lab with some DNA taken from the Indian Gray Mongoose, and I gave them a nice Granny Smith that bites snakes! Not because it wants to, just because it can!

It also tastes a little gamy.

They still pray for me down there, but every year they also ask me to send a bushel of Genway Adams Apples to throw into the swamp that surrounds their church!

Like I’ve always said, genetically engineered foods can make the world better. Or at least different!

Don’t Look For The Label

I’m very disappointed in Connecticut.

It’s a nice, wealthy eastern state that’s full of educated people, so why don’t they show more creativity when it comes to addressing concerns about Genetically Modified foods? The state legislature just passed a bill that, when certain conditions are met, will require GM foods to carry a label identifying them as such.

A label?

Labels are boring. The only reason to insist on labels is because you have Absolutely No Idea what gene manipulation can do! If I were passing laws to control Laboratory Based Manipulation Of Our Diet, I would make useful rules. I would require all food finaglers to Do Something Inventive that would make it Obvious we are Dealing with A Product That Did Not Originate in the Natural World!

Like the Genway COBRAnana!

Our COBRAnana is a tightly wound nutrient-rich package coiled and waiting to strike you numb with its tasty goodness. Yes, it senses your presence and although it does nothing to outwardly indicate that it knows you are near, when you least expect it you will find yourself with a face full of high-potassium fruitiness!

And yes, it carries a label, but slapping a tiny sticker on the produce is for cowards. You don’t need something like that to let people know they are about to eat A Banana That Springs From The Mind of Man!

I’m surprised that I have to say it here in the Land of Innovation, but this is what the Connecticut law should require. Not labels or the participation of neighboring states.

I love it when people are passionate about their foods, and no group is more passionate than those who get all wound up about genetically modified (GM) products. Every day at the store I’m buttonholed by people who have become irate about what they see (and don’t see) on the shelves. And one of the sharpest and most frequent complaints has to do with labeling – sometimes there is simply no way to tell if a food has been altered in the lab.

At Genway I stand by my promise – everything we sell has been tweaked, massaged, improved, and in some cases completely overhauled as part of a continuing process of unsupervised experimentation. You are our guinea pigs.

And in fact, if you visit the meat counter today, you’ll find choice cuts from Genway’s Giant Guinea Pigs (GGGP) are on special! These succulent animals are the result of a DNA cocktail that brought together the essence of guinea pig, combined with a little bit of farmyard hog, water buffalo and gray whale. The size improvement has been remarkable and far beyond anything anyone ever imagined for a mere guinea pig. They looked so tiny and helpless when, as a child, you kept them in a cage in your room. Now, one flank steak from a Triple G Pig can feed a family of five! Thanks, Butterball!

But seriously, if you are trying to provide for your family with a diet that includes nothing but GM foods, it is sometimes hard to know if you’ve found scientifically altered products. Certain experimenters are not as extravagant as I am and only they make subtle, virtually invisible changes. So you can’t always tell if a tomato in the produce bin has been bettered by someone like me. And why should you waste good money expecting to buy the results of literally weeks of random experimentation, only to wind up eating a fruit that has been touched by nothing more than the unaccountable hand of nature? There’s no drama in that!

By the way, if you’re looking for something that’s shockingly manipulated to add to a showy salad, try Genway’s Transparent Tomatoes! Thanks to the DNA of deep-sea jellyfish, these tomatoes are almost entirely see-through. Presentation is so important. When you serve the salad, it appears that a phantom-like cluster of seeds is hovering over the lettuce. The true nature of the fruit is only revealed when you slather it with dressing!

Where was I? Oh, yes. Labeling, and Our Promise.

When you come to Genway, you can be certain that everything in the store has been interfered with on a truly fundamental level. Right now you’ll have to take my word for it, but someday I hope we can perfect a technology that will make it possible for you to walk around the store and actually quiz individual products about their background. I can’t give you more details at the moment except to say it relies on a truly generous DNA donation from by gabby Aunt Lydia, who is known in the family for her fascination with her own pedigree and a habit of over sharing in the personal details department!

Dr. Kyle appears to be in touch with a segment of the food-shopping public you don’t often hear about – the GM product fan base. But it stands to reason that if there is a sizable group that believes everything natural is good, there’s a somewhat smaller counter-group that distrusts nature’s unpredictable ways. At least when you eat a Genway Giant Guinea Pig Flank Steak, you know who to blame when random parts of your body start to grow far out of proportion to the rest of you. Though if you’re also eating Genway’s Transparent Tomatoes, you may find that these newly oversized appendages are invisible to the casual observer. Eating equals adventure when you dine on foods from Genway!

A Look Behind the Curtain

My father has always been the kind of guy who wants to know how things work. When I was growing up I recognized the basement as a place where weird tools were kept and mysterious electronic boxes hummed in the dark. The corners were packed with various gadgets and implements that my mother called “junk”. Whatever purpose had caused them to be brought into the house, it was long forgotten. The best policy for a kid was not to touch things unless directed to do so. But if you wanted to kill a few hours, all you had to do was ask “what’s that”? Explanations were free and complete.

Through that question-and-suffer process I discovered I don’t have the necessary patience to know very much about anything. That’s why I went into the uninformed commentary business – we bloggers and pundits only have to figure out a plausible angle to get our work done.

And really, it doesn’t have to be all that plausible.

Thank goodness there are scientific researchers who are willing to pay closer attention to stuff, especially the debris collecting in the margins. Just yesterday a series of papers were published that upended what we’ve thought for years about how human traits are controlled.

To quote the New York Times story:

“The human genome is packed with at least four million gene switches that reside in bits of DNA that once were dismissed as ‘junk’ but that turn out to play critical roles in controlling how cells, organs and other tissues behave.”

And by “behave,” we mean “badly”. Complex diseases appear to be influenced by the throwing of hundreds of these gene switches. All that remains is to figure out which levers cause which things to happen. Not a simple task by any measure, but this work by hundreds of researchers in dozens of labs around the globe will have amazing and long lasting scientific and medical effects.

All because they had the patience to investigate the junk in the corner.

When has a closer look paid dividends?
